STEWARD, FLAGSHIP NIAGARA

DEFINITION: This is professional food service work and the performance of specialized cooking tasks on the United States Brig Niagara.

The Steward is responsible for the preparation of wholesome and nutritious meals for the ship's crew and guests, planning, provisioning, and overseeing the sanitation and cleanliness of the ship below deck. Duties include planning the ship's menu, preparing lists of needed supplies, procuring supplies, and converting the raw ingredients into meals. This position oversees ship's crew assigned to galley duty in the preparation of the meals and clean up of the galley and ship's below deck area. The Steward is also responsible for insuring the sanitation and cleanliness on the berthing deck and heads.

EXAMPLES OF WORK: Plans menus for the ship when docked and at sea and prepares lists of ingredients and supplies necessary to prepare the menu items in the required quantities.

Oversees the cleanliness of the below deck areas of the ship, especially in the galley and food storage areas.

Oversees the volunteer and paid crew assigned in the preparation of meals, provisioning, and cleaning.

Stores food supplies aboard ship.

Maintains the ship's wood cook stove including fuel and fire prevention measures and removal of ashes.

Performs related duties as required.

REQUIRED KNOWLEDGES, SKILLS, AND ABILITIES: Ability to maintain a marine wood burning stove including care and cleaning of the stove, fuel supplies, fire prevention equipment and proper disposal of ashes.

Ability to plan and prepare meals aboard ship for forty to fifty crew plus guests.

Ability to assign duties to crew in the cleaning of the galley area.

Ability to assign duties to crew in the preparation of meals.

MINIMUM EXPERIENCE AND TRAINING: Six months experience as a Steward/Cook aboard a sailing vessel.
