Description of Duties: Describe in detail the duties and responsibilities assigned to this position. Descriptions should include the major end result of the task. Example: Types correspondence, reports, and other various documents from handwritten drafts for review and signature of the supervisor. Production: Prepares simple food and beverage items. Washes and cuts fruits and vegetables. Receives, pulls, organizes, packs, and issues menu components from coolers, freezers, and dry storage areas. Gathers and assembles both food and non-food items for special events, camps, picnics, bag lunches, and other food orders. Labels, organizes, and restocks prescribed nutritional supplements. Uses knives, can openers, grinders, scales, food slicers, toasters, and other utensils. Opens and locks doors with keys. Operates an elevator. Counts, pre-portions, modifies, and labels food items for tray assembly using generated reports. Serving: Gathers and uses dishers, scales, spatulas, whisks, tongs, and related measuring devices to portion foods. Plugs in and turns on meal delivery carts prior to tray assembly. Lifts trays onto conveyor, and places appropriate service wares on trays. Reads diet information while tray is in motion. Portions specified food items in accordance with individualized tray tag. Covers exposed foods with proper fitting lids. Checks assembled trays for accuracy of serving amounts and food consistency. Corrects tray errors prior to the tray leaving the department. Calls out information related to tray assembly to other employees. Restocks food and non-food items on tray line. Loads trays into food carts with hot foods on heated side, and cold foods on refrigerated side. Sanitation: Cleans and sanitizes equipment and work areas by unloading soiled trays and dishes, pre-rinsing pots and pans, setting up and operating dishwashers. Cleans floors, walls, and all other storage and serving areas. Gathers supplies to maintain a safe and sanitary food serving environment. Uses chemicals and detergents. Hand washes and sanitizes items. Places garbage into secured dumpsters and operates a trash compactor. Uses safety equipment. Washes and sanitizes garbage cans and lids. Records refrigeration freezer and food temperatures. Follows cleaning and sanitation schedules. Properly sorts and stores sanitized equipment. Food Storage and Meal Delivery: Assembles and organizes dishes, plates, cups, adaptive equipment, utensils, and beverage containers onto ancillary carts. Plugs in and unplugs electrical food service equipment. Turns equipment on and off. Delivers and returns carts to designated areas. Loads and unloads various carts and racks. Pushes and pulls food and non-food supply carts. Uses keys to lock and unlock doors. Places supplements and beverages into ancillary dining room refrigerators/freezers. Stores refrigerated items in coolers. Stores frozen items in freezers. Uses the “first in- first out’ rotation for both perishable and non-perishable supplies. Labels and dates items prior to storage. Unloads skids. Works in hot, humid, cold, and/or wet environments for extended periods of time; assigned to gather, set-up, serve, and clean up after special events; reports broken equipment or any unsafe act or situation to a Supervisor; verbal and written instructions along with daily inspections of job assignments are given by the Supervisor and/or the food service management. Participates in trainings and attends meetings. Performs all or part of the above duties daily and other related duties as needed. Duties may vary in accordance with needs and related duties may be assigned. |
