Position Purpose:
Describe the primary purpose of this position and how it contributes to the organization’s objectives. Example: Provides clerical and office support within the Division to ensure its operations are conducted efficiently and effectively. 

To provide supervision and culinary arts instruction to inmates assigned to the Food Service Department of the Training Academy.

Description of Duties:
Describe in detail the duties and responsibilities assigned to this position. Descriptions should include the major end result of the task. Example: Types correspondence, reports, and other various documents from handwritten drafts for review and signature of the supervisor.

Enforce all security and custody rules/regulations.

Ensures that all keys, utensils, and other equipment are secured in the proper area and accounted for at all times. Ensure that all areas of the food service department are secured at all times (kitchen, dining room, storage areas, etc.).

Communicate effectively, both orally and in writing, with staff and inmates.

Assures that safety is maintained.

Reports situations which involve hazard and/or risk.

Work with other food service staff to make sure that all necessary work is performed in preparing and serving meals.

Assign, coordinate, instruct and review tasks performed in the preparation, production, and service of food.

Ensure that inmates are assigned to specific jobs and that they are capable of handling those functions with direction from food service staff.

Instruct inmates in an ongoing basis.

Work with Food Service Manager to determine menu items, recipes, amounts to prepare of food items, utilization of leftover food, proper portion size, and various preparation techniques to meet the highest standards for items produced.

Accurately estimate quantity of food needed at what times to minimize waste and assure a better product.

Instruct inmates on steps of preparation to achieve this batching of product, based on method chosen to prepare items.

Insure that food is served attractively, at proper temperatures, in proper portions to minimize waste, that the inmates serving are properly prepared (attire and amounts of food for time of meal period) and serving properly to keep long lines from developing.

Enforce all safety and sanitation rules/standards when checking inmate work assignments. Inspect floors, walls, tables, ovens, mixers, work stations (all areas, including dish room and dining room), all equipment, and break area for conformance with established cleanliness standards.

Make sure all items that are not cleaned properly are recleaned. Insure areas are properly prepared for the next meal.

Insure items are set in the proper places or positioned so that they may be moved to the proper area.

Insure items are replenished for next meal, i.e.: salt, pepper, napkins, cups, etc. Make sure that trash and clutter are removed from area and have been disposed of properly.

Discuss with Food Service Manager equipment repair and preventative maintenance needs. Insure that items needed for production are available by checking needs, rotating stock, receiving food items dating, and making sure that items are stored properly.

Report to the manager about food and other supplies needed or if there is a problem with any items.

Participate in cross training to gain knowledge of all areas of food service operation. With special emphasis on the operation of office equipment, ie. calculators, spread sheet programs, and PC’s.

Complete other tasks as assigned.

Employee can assign inmates to various tasks as workload dictates.
Most aspects of work are performed independently. A Corrections Food Service Manager (CFSM) reviews performance through work results to ensure quality, efficiency, and effectiveness of work.
