Description of Duties: Describe in detail the duties and responsibilities assigned to this position. Descriptions should include the major end result of the task. Example: Types correspondence, reports, and other various documents from handwritten drafts for review and signature of the supervisor. Food Preparation: Prepares foods such as toast, bread, hot cakes, French toast, sandwiches, beverages, cold menu items, etc. by following specific instructions, counts and standardized recipes in order to comply with the cycle menu and special events and meet pre-established time frames. Prepares, portions and packs food items for supplements, meals, special events, picnics, etc. following pre-designated amounts. Assists cooks in the preparation of food items to provide the required menu items and meet established meal service schedules under the cooks direction. Loads and unloads food and supply trucks, carts, food cambros; transports food and supplies to and from kitchens, storeroom, coolers, freezers and storage areas, and stocks food and supplies in coolers, freezers, kitchens, storerooms. Food Service: Operates food service equipment including toasters, steamers, grills, fryers, microwave, blender, slicer, VCM, dicer, grinder, hot cart, meat patty machine, hot cart, dish machine, garbage disposal, etc. by following established operating and safety instructions in order to prepare and serve menu items. Calls out tray tags and portions food onto trays, plates and/or tray inserts using serving utensils that provide the portion sizes as indicated on the menu. Prepares the individuals’ tray following the information provided on the tray tag and the menu and checks the tray for accuracy. Transports carts to and from loading and/or service locations. Issues supplies to kitchens and/or solariums and ingredient room by filling supply requests. Sanitation: Washes and sanitizes trays, dishware, glasses, adaptiveware, flatware, serviceware, pots and pans, equipment etc. by following established procedures. Follows established operating and safety procedures and time schedules in order to be ready for the service of the next meal. Performs daily and monthly cleaning by following established cleaning and sanitizing procedures according to the posted schedule, complies with food safety and sanitation regulations. Cleaning tasks may include, but are not limited to: tables, chairs and dish room area to include dish room walls and floors in the unit dining rooms; equipment and work areas in the main kitchen, food preparation and service areas; as well as refrigerators, freezers, food carts, toasters, coffee pots and floor. RELATED DUTIES When assigned cuts, sorts and organizes tray identification labels by following established procedures in order to run an efficient tray line operation. Attends in-service training sessions and dietary department meetings. Assists in storage and disbursement of supplies required for use by dietary. Performs all job-related duties as assigned by the supervisor. Must have the ability to establish and maintain cooperative and constructive working relationships with all Ebensburg Center staff and individuals. |
