Responsible and accountable for supervising food production and food service work in the three cafeterias, the Trayline, the kitchen and the Ingredient Room to assure that appetizing, nutritionally balanced meals are served to consumers in support of the overall departmental goals of maintaining a safe, clean, pleasant dining environment for consumers. |

Description of Duties: Describe in detail the duties and responsibilities assigned to this position. Descriptions should include the major end result of the task. Example: Types correspondence, reports, and other various documents from handwritten drafts for review and signature of the supervisor. Supervises all Dietary areas in order to assure that meals are properly prepared and served at designated times and that all departmental policies and procedures are followed. Schedules and assigns job duties verbally and by completing work schedules, cleaning schedules in order to assure smooth, efficient Dietary operations. Reviews staffing by checking attendance, controlling overtime, re-assigning staff to compensate for labor shortages, and administering leave in order to maintain adequate labor coverage in the Department at all times. Provides training to employees and orients new employees by demonstrating and explaining proper methods, cleaning procedures, and equipment care and use in order to assure food is prepared and served attractively, at proper temperatures and in proper portions to prevent waste and that safety/sanitation standards are maintained. Communicates information to subordinates, co-supervisors and dietitians verbally and by completing required reports, projects and performance evaluations in order to provide food high in quality, prevent food waste, maintain established budgets, and assure policies and procedures are followed. Performs other related duties, including attendance at meetings, in-services and special occasions food preparation and service, by completing assignments made by Director of Dietetic Services II, FSM, or designated Dietitian in order to assure a smooth, efficient operation of the Department. Maintains a good attendance record by following hospital and departmental time and attendance policies and procedures in order to maintain adequate supervisory labor coverage in the Department. Maintains food storage and food supplies by receiving and transporting to storage areas all incoming food deliveries, maintaining order and security of food and supply items, taking regular inventories of food storage areas, recording on card file and preparing daily reports of food issues in order to maintain sanitation standards, security and safety of food supplies. Performs job duties in a safe manner by being familiar with safety rules and regulations in order to prevent accidents. Performs dietary duties when needed by preparing and serving meals, working at dishwasher and cleaning in order to maintain adequate labor coverage throughout the Department. Performs food production duties when needed by roasting meats, cooking vegetables, casseroles, and soups and preparing salads, desserts, sauces, beverages and special diet foods in order to meet nutritional needs of consumers. Conducts administrative reviews as assigned. This employee has been assigned responsibility as a Patient Abuse Investigator at Wernersville State Hospital. As such, the employee is expected to participate in all required training and, as assigned, conduct and carry out investigations in a professional and timely manner. Investigations will be carried out in a manner consistent with DHS Manual Section 7178 and Hospital Policy Section 703. While performing patient abuse investigations the employee will be responsible directly to the CEO.*Obtains and maintains CPR Certification and utilize skills as necessary. |
