Position Purpose:

This is hospitality work as a lead worker in the performance of hotel and food service operation at Kings Gap Mansion.

Responsible for restaurant food production at Kings Gap. Work involves specialized production and cooking tasks in the conversion of raw ingredients into finished menu items such as meats, vegetables,soups, and sauces.

Responsible for cleaning and housekeeping of mansion at Kings Gap.

Responsible for laundering and ironing (if required) of mansion sheets, bedspreads, towels, table clothes, and other linens used at Kings Gap.



Description of Duties:
Describe in detail the duties and responsibilities assigned to this position. Descriptions should include the major end result of the task. Example: Types correspondence, reports, and other various documents from handwritten drafts for review and signature of the supervisor.

Employee directs and inspects the work of lower level cooks & food service workers engaged in the performance of specialized and routine production and cleaning tasks. Work includes the coordination of tasks performed by lower level cooks in preparing a variety of menu items to be completed simultaneously on a set time schedule. The employee directs techniques and procedures for cooking and develops and revises recipes for quality and quantity of food. Employee is responsible for preparing orders for cooking ingredients and supplies; cleaning and housekeeping supplies and maintaining and updating recipe files.

Lead Work

Functions as a lead worker by assigning, coordinating, participating in, and reviewing specialized and routine production tasks performed by lower level cooks & food service workers.

Directs techniques and procedures for cooking; and develops and adjusts recipes to attain higher standards of quality and to comply with PA SERV Safe requirements and standards.

Participates in and instructs subordinate cooks and food service workers in the performance of specialized and routine production tasks and in the care and use of kitchen utensils and equipment.

Trains and directs subordinate cooks & food service workers in the performance of specialized and routine cleaning and housekeeping tasks.

Prepares orders for cooking ingredients and supplies

Prepares orders for cleaning, laundering, and housekeeping supplies.

Ensures that kitchen and cleaning equipment is properly maintained and informs manager of any needed maintenance repairs or replacement. Suggests the purchase of new equipment to increase efficiency, safety, and/or quality guest of experience.

Maintains recipe files.

Reports cook and food service attendance to Administrative Assistant and Center Manager.

Food Preparation

Participates in the production and cooking of a variety of meats, vegetables, casseroles, soups, and sauces in large-scale food production.

Reviews menus; monitors food use and consumption; adjusts recipes accordingly; and recycles leftover food into useable food products to reduce waste.

Prepares special menu items for special events, meetings, receptions and banquets.

Prepares ingredients and cooks menu items for special and modified diets.

Operates kitchen equipment such as ovens, broilers, fryers, and mixers used in production and cooking.

May be responsible to obtain and maintain ServSafe certification

Sanitation

Assigns, participates in, and inspects the cleaning of cooking utensils and equipment, and floors, wood surfaces, and other areas in the production area.

Assigns, participates in, and inspects laundering and ironing (if required) of mansion sheets, bedspreads, towels, table clothes, other linens used at Kings Gap.

Assigns, participates in, and inspects cleaning and housekeeping of mansion to including offices, bedrooms, bathrooms, and restrooms. May perform similar duties in the Education Building as they relate to the preparation, execution, or clean-up of events that involve that facility.

 6. Instruct and assign cooks and food service workers in specialized and routine production, cooking, cleaning, and housekeeping..
 7. Accurately estimate the quantity of prepared food needed for the number of guests for any given function
 8. Operate modern kitchen equipment in preparing a variety of menu items.
 9. Prepare ingredients and cook food items on a quantity basis.
 10. Participate in, instruct, and direct others in the proper method to of laundering and ironing of the linens used at the center.
