The employee in this position performs specialized cooking tasks at a Veterans long-term care facility. |
Description of Duties: Describe in detail the duties and responsibilities assigned to this position. Descriptions should include the major end result of the task. Example: Types correspondence, reports, and other various documents from handwritten drafts for review and signature of the supervisor. Operate kitchen equipment such as ovens, fryers, mixers, kettles, skillets, grills and food processors. Report any malfunctions to the Food Service Supervisor. Clean and sanitize cooking utensils and equipment used in food preparation and serving of meals. Clean floors, work surfaces and all other areas used in food preparation. Maintain recipe files. Weigh, measure, package and label ingredients necessary for all recipes and assist in developing and testing new recipes. Prepare cooked meats, vegetables, casseroles, soups and sauces for both regular and therapeutic diets. Check food items before, during and after cooking to ensure quality of food items. Taste all finished cooked products and evaluate on tasting summary sheets. Prepare special food items for special meals, meetings, banquets and parties. Bake desserts such as cakes, pies or cupcakes. Assign, coordinate, participate in and review the routine food production tasks performed by the Food Service Workers. Assist in the training of new cooks in proper methods of cooking and baking. Process advance food preparation for the next day; and ensure leftover food items are properly utilized. Record on inventory sheets any food items or non-food supplies used from refrigerator, ingredient room, freezer and storage areas. Prepare requisitions for cooking ingredients and supplies. As needed, assist with the receipt and inspection of food supplies. Lock and unlock the Dietary Department when needed. Lock the ingredient room, cooks freezer and refrigerator. Consult with the Food Service Supervisor to determine the best method of preparation for individual food items and modified diets. Plate food items for resident meals as needed. Attend in-house and out-service training provided to enhance food preparation/sanitation skills and knowledge. Performs work in accordance with the DMVA general safety rules and safety rules for this position. Immediately reports all workplace injuries or incidents to the supervisor; and/or immediately corrects any safety hazards in the work area or reports same to supervisor. Use personal protective equipment when required such as gloves, masks, face shield, etc. Perform other related duties as required. |
