Description of Duties: Describe in detail the duties and responsibilities assigned to this position. Descriptions should include the major end result of the task. Example: Types correspondence, reports, and other various documents from handwritten drafts for review and signature of the supervisor. Inputs into Geri Menu all information on movement of resident population, including new admissions, discharges, and leaves; inputs information on resident food preferences and diet orders; prepares and maintains diet tray cards; reports any resident-related information to Clinical Dietitian. Develops, improves, and maintains daily production assignment forms for all food preparation. This includes making adjustments for menu changes and following through with Cooks and Food Service Workers to ensure proper use and understanding of the assignment sheets. Prepares menus and amounts of food required for the Activities Department-related functions, for packed lunches or early meals for residents with out-of-town appointments and for routine coffee breaks. Maintains appropriate records for the above. Prepares food for special functions and other departments as needed. Supervises portioning, plating, and handling of food to be served on resident and guest trays paying special attention to quality, portion size, accuracy in number of portions, food handling techniques, safety and time effective practices. Supervises and coordinates all activities related to meal service to assure efficient use of manpower and guarantee quality food accurately served at proper temperatures. Supervises and coordinates all activities related to cafeteria service to residents and guests to assure service of correct diets, controlled portions, proper temperatures; monitors Cook/Food Service Worker/resident relationships in face-to-face food service; assures that resident dining and food service area is sanitary, safe and pleasant. Prepares and adjusts daily job assignment sheets with consideration that Cooks and Food Service Workers are rotated through appropriate duties; fills positions that are vacant due to absenteeism with consideration for minimum number of workers required and in compliance with overtime equalization. Reports all resident-related problems or significant information to appropriate staff person. Develops and presents regular in-service training and retraining to Cooks and Food Service Workers on all matters pertinent to the safe, efficient operation of a quality food service program in a health care setting. Provides orientation and training to new employee and documents results. Develops and implements procedures for care and use of supplies and equipment used by Cooks and Food Service Workers. Develops and implements procedures for cleaning and sanitation of all kitchen equipment, floors, coolers, freezers and storage areas. Develops and maintains a master cleaning list; assigns all cleaning tasks and checks for compliance with proper procedures. Prepares and submits maintenance work orders in a concise, timely manner. Follows through to assure that repairs are completed. Practices preventive maintenance by planning and monitoring conditions of all equipment. Verifies that all potentially hazardous foods are transported in a sanitary manner at safe temperatures. Reports any discrepancies to immediate Supervisor or Director of Dietetic Services in a timely manner. Observes stock clerk activities to ensure that items received are properly handled and stored. Provides food handling instruction as necessary. Prepares weekly requisitions for disposable, chemical and food supplies to maintain an adequate supply. Counsels and evaluates Cooks and Food Service Workers. Recommends disciplinary action. Completes work performance observations and personnel evaluations. Checks schedules to grant leave as work schedule permits. Prepares and submits accident reports and all other assigned reports in a timely, concise manner. Attends and participates in formal and informal department Supervisory-related meetings and resident meetings as assigned. Communicates daily with immediate Supervisor and/or Department Head. Offers frequent ideas for system improvement and supervises implementation of those discussed and approved. Identify actual and potential safety and health hazards for residents and staff and take appropriate corrective actions Performs work in accordance with the DMVA general safety rules and safety rules for this position. Immediately reports all workplace injuries or incidents to the supervisor; and/or immediately corrects any safety hazards in the work area or reports same to supervisor. Support the facility QAPI efforts by attending all assigned QAPI training; following established policies and procedures in support of QAPI efforts; participate in PIP teams as assigned; sharing ideas for improvement in the organization; and supporting QAPI efforts both verbally and non-verbally, including adjusting performance and practice in accordance with QAPI initiatives and findings. |

Direct supervision is provided to the Cooks and Food Service Workers through observation of work techniques, inspection of products and adherence to standards. Assigns duties, evaluates performance, documents and records related information. Interviews and selects applicants for vacancies, approves/disapproves leave, recommends training and disciplinary actions, communicates performance standards and evaluates results. |
