Position Purpose:
Describe the primary purpose of this position and how it contributes to the organization’s objectives. Example: Provides clerical and office support within the Division to ensure its operations are conducted efficiently and effectively. 

The employee assigned to this position may perform on a rotational basis, a variety of food service, and food preparation and sanitation tasks in the dietary operation. Employee may perform minor food preparation and service for special dietary catered hospital functions at the direction of a Food Service Supervisor. Employee may also perform assembly tasks in the supplement/nourishment/snack area by using current patient census for distribution to all patient units. Prepares simple menu items such as broth and sandwiches. Responsible for preparation of bagged meals as appropriate.


Description of Duties:
Describe in detail the duties and responsibilities assigned to this position. Descriptions should include the major end result of the task. Example: Types correspondence, reports, and other various documents from handwritten drafts for review and signature of the supervisor.

Employee's work assignments are located in all dietary areas, e.g. dry storage areas,
prep areas, tag room, tray assembly areas and refrigerated storage areas. Employee's tasks interrelate in an area with the other employees to ultimately provide meals and meet pre-established institutional and regulatory requirements.

Participates in cleaning of all food service standards according to the cleaning procedures to maintain high standards of sanitation. Provides for a clean and sanitary environment by performing housekeeping duties such as cleaning floors, walls, baseboards, interior posting windows, tables, chairs, equipment, work surfaces, etc. Posted cleaning assignments are completed daily.

Maintains proper oral and written communication by recording and/or sharing appropriate job-related information with workers/supervisor regarding methods, practices to provide for an efficient and effective food service operation utilizing the proper chain of command.

Employee in the position of a FSW-1 is responsible for the performance of other following specific duties in the food service operation:

Tag Room: Responsible for checking & assembling patient's meal tags for all three meals. Updating the meal tags when changes are called in. For weekends & holidays, tags will be prepared in advance. FSW 1 in the tag room answers the phone for diet changes, admissions, discharges & processes all messages throughout the meal and before the shift ends. When a liquid diet is requested after the tray line is finished, the tag room is responsible for assembling and sending it out to the specified location with the truck driver.

Runner Station: Assembles foods, supplies & utensils for the tray line for all three meals (example: storeroom, refrigeration, prep area)

Starter Position: Assembles start stations for all three meals, cleans starter station & replenishes it for the next meal & covers with brown paper. Cleans all crumbs and debris from conveyor belt then washes, polishes it thoroughly. Performs additional assignments: food preparation, food pre-portioning, food assembling and sanitation. Starter must empty out bins at the end of each working day and put items (such as mayo, jelly, ketchup, mustard, salad dressing, etc.) in their proper places. Positions of meat truck, vegetable, dessert and beverage (cold) trucks is responsible for serving accurately house and modified diets as to portion size and diet needs. Employee is responsible for after meal clean up, food preparation, portioning and assembling food and supplies. Employee on beverage truck is responsible for checking expired dates (especially on condiments) and reporting outdated items to supervisor.

Checker: Employee inspects the assembled tray for accuracy and appearance then stacks covered tray on a tray delivery cart as indicated on a posted chart. Assists with strapping when directed. Additional duties can be in food preparation, pre-portioning, and assembling of food or supplies or perform duties in sanitation.

Wrapper Station: Responsible for getting and correctly labeling tray delivery carts for all units. Alternating between two tray lines on which trays are being assembled. Transporting strapped & correctly labeled carts to a designated walk-in refrigerator. Employee performs additional duties in food preparation, food pre-portioning, assembling of food or supplies or perform duties in sanitation and lifting of beverage cases.

Nourishment Station: Nourishment's are assembled, packaged, labeled and dated for all resident patients whose physician indicates supplemented nourishment's in addition to the three meals served. All packages & bags are placed on a cart placed in a walk-in refrigerator, delivered by dietary staff & then distributed to the patients by nursing staff during breakfast meal. This employee assists Volunteers with assembling Meals on Wheels for two (2) routes. Performs additional duties when assigned by supervisor/dietitian on duty.

Pot Washer: Pot washer assembles, scrapes, soaks, washes & stacks all steam table pans, baking sheets, pots, kitchen utensils, mixing bowls & containers. When the above are cleaned and dried they are transported to the assigned area. Responsible for maintaining sinks, sink counters, work tables, trash & garbage cans & dollies. Operates garbage disposal daily & cleans it after use. Cleans floors, walls & storage racks. Employee may be assigned to food production area to assist in food preparation tasks (Example: open cans, boxes, pan food, clean equipment on site)

Dish room Duties: Operate tray washing or pot machine. All trays, etc., are to be returned to the dish wash area to be properly sanitized. Feeds and takes out clean trays, stacks these on drying racks and transports full racks to the tray assembly area. Wash snack bins, in the pot machine and stack all to air dry. Delime all machines. Monday, Wednesday, and Friday clean inside and wipe outside with mineral oil.

Evening Nourishment: Assembles, labels and stores on appropriate carts bulk nourishment’s for all patients units to be delivered in the late afternoon.

Truck Helper: Helps truck driver deliver food trays to building and bring soiled trays back to kitchen. Assists in delivering snacks and nourishments to the buildings. During meal service, help on tray line by serving the beverage. At 2 pm, another assignment is given to assist in carrying out functions of the Dietary Department.

Storeroom Helper: Assists in stocking food and non-food supplies by unloading skits to ensure required food supplies are stocked according to menu needs, “first in, first out” method in refrigerated and non-refrigerated spaces and complying with regulatory storing standards.

Performs other related work duties as applicable and required.

Attends scheduled in-service training classes.

All duties are completed under the close guidance and supervision of the lead worker or the Food Service Supervisor.
